This farm can be found in the Guji zone, the southern part of Oromia at the Dawa basin. The farm was started by Haile Gebre's grandfather and began producing organic coffees in 2001 and is now Organic, Rainforest Alliance and Fairtrade USA certified. Haile works closely together with medium-sized local growers who are specialised in this highland forest coffee.
Moredocofe provides farmers with new seedlings and extensive education on harvesting, cherry selection, and organic agricultural practices. Permanent staff members offer practical experience in coffee production, processing, and harvesting.
Recently, Haile finished building a beautiful state of the art dry mill located in Addis Ababa. The multi-story building handles both natural and washed processed coffee and includes a cupping lab.
This coffee provides a complex, crisp cup with the aroma of rose petals and flavours that remind me of sugar coated fruits accomplished with a light caramel finish. Adding milk will suppress the fruit notes, leaving only the sweetness to support the milk.
